  1. 1 (5-ounce) can tuna in water, drained
  2. 1/2 cup white rice, uncooked
  3. 1 cup water
  4. 1 cup bell pepper, sliced
  5. 1 tablespoon olive oil
  6. 1 teaspoon lemon juice
  7. 1/4 teaspoon black pepper

Directions

  1. In a small saucepan over medium heat, bring water to a boil, add rice, reduce heat to low, cover, and simmer for 12-15 minutes until tender.
  2. In a medium skillet over medium heat, heat olive oil, add bell pepper, and sauté until tender-crisp, about 5-7 minutes.
  3. Flake tuna into the skillet, add cooked rice, lemon juice, and black pepper, stir-frying for 2-3 minutes until heated through.
  4. Divide into two bowls and serve hot.
