  1. 4 ounces rice noodles
  2. 1 cup bell pepper, sliced
  3. 1 tablespoon olive oil
  4. 1 tablespoon tamari (or soy sauce for non-GF)
  5. 1/4 teaspoon black pepper

Directions

  1. In a medium pot, bring water to a boil and cook rice noodles according to package instructions (about 5-7 minutes), then drain.
  2. In a medium skillet over medium heat, heat olive oil, add bell pepper, and sauté until tender-crisp, about 5-7 minutes.
  3. Toss in cooked noodles and tamari, mixing well, divide into two bowls, and serve hot.
