  1. 1/2 cup white rice, uncooked
  2. 1 cup water
  3. 4 ounces sliced turkey breast
  4. 1 cup mixed greens
  5. 1 tablespoon olive oil
  6. 1 teaspoon lemon juice
  7. 1/4 teaspoon salt
  8. 1/4 teaspoon black pepper

Directions

  1. In a small saucepan over medium heat, bring water to a boil, add rice, reduce heat to low, cover, and simmer for 12-15 minutes until tender.
  2. In a medium bowl, toss cooked rice, turkey, and mixed greens with olive oil, lemon juice, salt, and pepper until well combined.
  3. Divide into two bowls and serve warm or chilled.
