Ingredients
- 8 ounces pork tenderloin, thinly sliced
- 1 cup cooked rice (preferably day-old)
- 1/2 cup mixed veggies (e.g., bell peppers, carrots)
- 1 tablespoon olive oil
- 1 tablespoon soy sauce (or tamari for gluten-free)
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Directions
- - In a large skillet over medium heat, heat olive oil, add pork, salt, and pepper, and cook until browned, about 5-7 minutes (internal temperature 160°F). Remove pork.
- - In the same skillet, add mixed veggies and stir-fry for 5 minutes until tender.
- - Add rice and soy sauce, stir-frying for 3-5 minutes, then return pork to skillet, toss, and divide into two bowls.
- - Serve warm.
