  1. 8 ounces pork tenderloin, thinly sliced
  2. 1 cup cooked rice (preferably day-old)
  3. 1/2 cup mixed veggies (e.g., bell peppers, carrots)
  4. 1 tablespoon olive oil
  5. 1 tablespoon soy sauce (or tamari for gluten-free)
  6. 1/4 teaspoon salt
  7. 1/4 teaspoon black pepper

Directions

  1. - In a large skillet over medium heat, heat olive oil, add pork, salt, and pepper, and cook until browned, about 5-7 minutes (internal temperature 160°F). Remove pork.
  2. - In the same skillet, add mixed veggies and stir-fry for 5 minutes until tender.
  3. - Add rice and soy sauce, stir-frying for 3-5 minutes, then return pork to skillet, toss, and divide into two bowls.
  4. - Serve warm.
