Ingredients
- 8 ounces sausage links (sugar-free for Keto)
- 2 cups kale, chopped
- 1 tablespoon olive oil
- 1 teaspoon lemon juice
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Directions
- - In a large skillet over medium heat, heat olive oil, add sausage, and cook until browned, about 5-7 minutes (internal temperature 160°F). Remove, slice, and set aside.
- - In the same skillet, add kale and sauté until wilted, about 3-5 minutes.
- - In a medium bowl, toss kale with lemon juice, then top with sausage slices, divide into two bowls, and serve warm.
