  1. 8 ounces ham, diced
  2. 1 cup potatoes, diced
  3. 4 cups chicken broth (low-sodium)
  4. 1/2 cup onion, diced
  5. 1 tablespoon olive oil
  6. 1/4 teaspoon salt

Directions

  1. - In a large pot over medium heat, heat olive oil, add onion, and sauté until softened, about 5 minutes.
  2. - Add ham, potatoes, chicken broth, salt, and pepper, bringing to a boil.
  3. - Reduce heat to low, cover, and simmer for 20-25 minutes until potatoes are tender.
