Ingredients
- 1/2 cup brown rice, uncooked
- 1 cup water
- 8 ounces firm tofu, cubed
- 1 cup broccoli florets
- 1 tablespoon olive oil
- 1 tablespoon tamari (or soy sauce for non-GF)
- 1/4 teaspoon black pepper
Directions
- In a small saucepan over medium heat, bring water to a boil, add brown rice, reduce heat to low, cover, and simmer for 20-25 minutes until tender.
- In a medium skillet over medium heat, heat olive oil, add tofu cubes, and cook until golden, about 5-7 minutes.
- Add broccoli and tamari, stir-frying until broccoli is tender-crisp, about 5-7 minutes.
- Toss in cooked rice, mix well, divide into two bowls, and serve hot.
Storage
Refrigerate in an airtight container for up to 4 days. Reheat in a skillet or microwave.
