  1. 8 ounces ground beef, formed into 2 patties
  2. 1 cup zucchini, sliced
  3. 1 tablespoon olive oil
  4. 1/4 teaspoon salt
  5. 1/4 teaspoon black pepper

Directions

  1. - In a medium skillet over medium heat, heat 1/2 tablespoon olive oil, season beef patties with salt and pepper, and cook for 4-5 minutes per side until browned (internal temperature 160°F). Remove and set aside.
  2. - In the same skillet, add remaining olive oil and zucchini, sautéing until tender, about 5-7 minutes.
  3. - Serve each patty with a side of zucchini, 1 plate per portion, warm.
