Ingredients
- 1 lb flank steak
- 8 corn tortillas (or lettuce leaves for Paleo)
- 2 avocados , mashed
- 1/4 cup red onion, chopped
- 2 tablespoons olive oil
- 1 tablespoon lime juice
- 1 teaspoon cumin
- - Salt and pepper to taste
Directions
- - Preheat grill pan to medium-high heat.
- - Season steak with 1 tablespoon olive oil, cumin, salt, and pepper; grill for 5-7 minutes per side until desired doneness (135°F/57°C for medium-rare), then slice thinly.
- - In a bowl, mix mashed avocados, onion, lime juice, remaining oil, salt, and pepper to make guacamole.
- - Warm tortillas, fill each with steak and guacamole, and serve 2 tacos per portion warm.
Storage
