  1. 1 cup quinoa
  2. 2 cups vegetable broth
  3. 2 cups mushrooms, sliced
  4. 1 onion , chopped (optional for Jain)
  5. 2 cloves garlic, minced (optional for Jain)
  6. 2 tablespoons olive oil
  7. 1 teaspoon thyme
  8. - Salt and pepper to taste

Directions

  1. - Preheat oven to 375°F (190°C).
  2. - In a saucepan, bring broth to a boil, add quinoa, reduce heat, and simmer for 12-15 minutes until fluffy.
  3. - Heat olive oil in a skillet over medium heat, sauté onion, garlic (if using), and mushrooms for 5-7 minutes, mix with quinoa, thyme, salt, and pepper; transfer to a baking dish and bake for 25-30 minutes.
  4. - Serve 1 cup per portion warm.
