  1. 2 cups canned chickpeas, rinsed and drained
  2. 3 cups fresh spinach
  3. 4 cups vegetable broth
  4. 1 onion , chopped
  5. 1 tablespoon olive oil
  6. 1 teaspoon cumin
  7. Salt and pepper to taste

Directions

  1. In a large pot, heat olive oil over medium heat.
  2. Add onions and sauté for 3-4 minutes.
  3. Stir in chickpeas, cumin, salt, and pepper.
  4. Add vegetable broth and bring to a boil, then reduce heat and simmer for 20 minutes.
  5. Stir in spinach and cook for an additional 3-4 minutes.
