  1. 1 lb chicken thighs, cubed
  2. 1 cup dried lentils, rinsed
  3. 2 cups chicken broth
  4. 1 onion , chopped
  5. 2 tablespoons olive oil
  6. 1 teaspoon cumin
  7. - Salt and pepper to taste

Directions

  1. - Preheat oven to 375°F (190°C).
  2. - Heat 1 tablespoon olive oil in a saucepan, add onion and chicken, season with cumin, salt, and pepper, and cook until browned, about 5-7 minutes.
  3. - Stir in lentils and broth, transfer to a baking dish, drizzle with remaining oil, and bake for 35-40 minutes until lentils are tender.
  4. - Serve 1 cup per portion warm.
