  1. 6 large eggs, beaten
  2. 2 cups spinach, chopped
  3. 1/2 cup feta cheese, crumbled
  4. 1 tablespoon olive oil
  5. 1/4 teaspoon salt

Directions

  1. Heat oven to 375°F and grease an 8x8-inch baking dish with olive oil.
  2. In a medium skillet over medium heat, heat olive oil.
  3. Add chopped spinach and sauté until wilted, about 2-3 minutes.
  4. In a large mixing bowl, whisk eggs with salt and pepper, then stir in sautéed spinach and crumbled feta.
  5. Pour mixture into the prepared baking dish.
  6. Bake for 25-30 minutes until set and lightly golden.
  7. Cut into 4 squares and serve warm.
