  1. 2 cups cauliflower, riced (about 1 small head)
  2. 1/2 cup shredded cheddar cheese
  3. 1/4 cup heavy cream
  4. 1 tablespoon olive oil
  5. 1/4 teaspoon salt

Directions

  1. In a food processor or with a grater, rice cauliflower until it resembles grits (or use pre-riced).
  2. In a medium saucepan over medium heat, heat olive oil.
  3. Add riced cauliflower and cook, stirring occasionally, until softened, about 5-7 minutes.
  4. Stir in heavy cream, salt, and pepper, and cook for 3-4 minutes until thickened.
  5. Remove from heat, stir in shredded cheddar cheese until melted, and divide into two bowls.
  6. Serve warm.
