Ingredients
- 2 cups cauliflower, riced (about 1 small head)
- 1/2 cup shredded cheddar cheese
- 1/4 cup heavy cream
- 1 tablespoon olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Directions
- In a food processor or with a grater, rice cauliflower until it resembles grits (or use pre-riced).
- In a medium saucepan over medium heat, heat olive oil.
- Add riced cauliflower and cook, stirring occasionally, until softened, about 5-7 minutes.
- Stir in heavy cream, salt, and pepper, and cook for 3-4 minutes until thickened.
- Remove from heat, stir in shredded cheddar cheese until melted, and divide into two bowls.
- Serve warm.
Storage
Refrigerate in an airtight container for up to 3 days. Reheat in a saucepan or microwave with a splash of cream.
